The Fruitcake Factory team is made up of 3 super dedicated, passionate and highly experienced members of staff:

Karen Lawson:

Karen Lawson

Trained at The National Bakery School in London Southbank University. Teaching in major universities and colleges, for the past 24 years, Sugar craft and Cake Decoration has been and continues to be my life.

I have supplied commissioned cakes for The Queen Mother, Princess Anne, Prince Charles, The Lord Mayor of London, The Worshipful Company of Bakers, and many Corporate companies such as Virgin, The Prudential, Rank Hovis and many more.

My first love though is with my students. Nothing can give more pleasure than seeing someone master a new skill!

For many years, I have been thoroughly spoilt!
We learn from each other and we are all in this together has always been my ethos.

Tom Mansfield:

Tom Mansfield

After leaving school and training in the hospitality and food industry I decided that my future lay in the baking industry.
Initial training and the gaining of qualifications led to a teaching career at the National Bakery School at London Southbank University for 22 years.

My qualifications are based on Bread Baking and Confectionery production, Plant Bakery and Artisan Craft:

 

 

 


Martin Lawson:

My role (or should I say ‘roll’!) at the Fruitcake Factory is as technical support to the highly qualified tutors employed there. This allows them maximum time and energy with the specialised courses that they undertake.

From your initial contact with the school to manufacturing sour dough starters and specialised flower paste.

Trained at the National Bakery School at London Southbank University. From my initial interest in bulk catering in the early 1980’s to my latter interest in the finishing and presentation of food and confectionery. I hold qualifications in the following fields:
